Rainy Day Chicken and Rice Soup

It's a Monday morning and it's raining.  Beautiful day for a bowl of wonderful, warm soup.


This recipe comes from Trisha Yearwood.  Her recipes always have that down-home, make you feel good, goodness.

Rainy Day Chicken and Rice Soup

Ingredients
2 tablespoons dried parsley
1/2 teaspoon pepper
1/2 yellow onion, finely chopped
4 boneless, skinless chicken breast halves
5 chicken bouillon cubes
6 carrots, peeled and sliced
4 medium red potatoes, peeled and cubed
6 ounces fettuccine noodles
3/4 cups instant rice, uncooked
One 12-ounce brick processed cheese, cubed (about 3 cups), such as Velveeta



Directions
In a large stockpot combine the parsley, pepper, onion, chicken, bouillon cubes and 10 cups water. Bring to a boil and cook for about 30 minutes. Remove and reserve the chicken from the broth, then strain the broth into a large bowl. Discard the onion mixture. Allow the chicken to cool and cut into cubes.

Measure the broth and add water so that you have 8 cups of liquid in the large stockpot. Add the carrots and potatoes, bring to a boil and cook until the potatoes are done, about 20 minutes. Add the noodles and cook for 10 minutes more. Remove the pot from the heat and add the rice and reserved chicken. Stir the mixture and let it stand for 10 minutes before serving. Garnish with cubed cheese.

It took me about 1/2 hour to create 30.  My kind of Valentine! 


Just need a printer, paper and 1 bag of wrapped chocolate hearts.  I found my chocolates at Walgreens.

They were right on the mark!

Valentine Mantels and Cozy Corners

I've been searching Pinterest for ideas of Valentine decor.  These are a few of my favorites, so far.


I love the idea of re-purposing everyday things to create beautiful vignettes. 


I also like to display family heirlooms.  


Simple prints, red pots and greenery.  LOVE.
 

Old newspapers or magazines can create such heartfelt beauty.
 

Elegant.  From an old window frame.


Just makes you want to curl up with someone special.  
Or at least a good book.

Chocolate Covered Valentine Treats

Candy Bar Brownies


I love this recipe.  It's really not much of a recipe.  Just a few layered ingredients and you've got a tasty little brownie with even more chocolate goodness inside.


You need 2 Duncan Hines (Family Size) chewy fudge brownie mixes.  2 Symphony bars, and that is IT!  I like my brownie with a little crunch so I use the Almonds and Toffee Chip bar.


Make up the mixes as directed and spread half the mix into the bottom of a greased 9x13 pan.  Lay the Symphony Bars across the unbaked brownie mix.  Then carefully spread the remaining mix across the top of candy bars.


Bake as directed on the brownie mix box.  The candy bar will harden as you let the brownie completely cool. 


It's as easy as that.

Extreme Rice Krispy Treats


All I can say is YUM!


Well maybe just a few more words to describe D.E.L.I.C.I.O.U.S!  
And so easy to make.


Start with your 1st batch of rice krispy bars.  Smooth into a buttered square pan with tall sides.  Let cool.


Top with marshmallows and chocolate chips.  Or whatever makes up your delicious!


Whip up a caramel sauce.  My favorite is here


Layer caramel mixture over the chips and marshmallows.  Let set in refrigerator.  Make up 2nd batch of rice krispy bar mixture and place over the top of caramel.  Press firmly.


Drizzle chocolate over the top.  Let set (in refrigerator) and then cut.


You can double the recipe and put on a parchment covered jelly roll pan.


Double Deliciousness!


Wrap up a square or two for a friend and call it 
HAPPY VALENTINE'S DAY
